The idea of fixed price freelancing is really great I mean freelancers ask for a fixed price for fixed hours of working, but it is actually good if the client is good in nature otherwise mostly clients argue with the freelancers and want to get and more services being provide with in less paid wage.

But as far as hourly projects are concerned, sometimes the freelancer wrongly assume that the particular project will be completed in 1 day and ask wages according to that. But due to their wrong assumption the got a high loss.
Therefore, freelancers should work on fixed price basis.

Yes time tracking is more beneficial to employers in comparison with employees it doesnt means that it did not serve the employees.
